For the Sushi Rice
- 2 cups sushi rice cooked
- 2 tbsp rice vinegar
- 1 tbsp sugar
- ½ tsp salt
For the Topping
- 8 oz imitation crab or real crab, shredded
- 4 oz cream cheese softened
- ½ cup Japanese mayo Kewpie
- 1 tbsp sriracha adjust to spice preference
- 1 tbsp soy sauce
For Assembly & Garnish
- ½ cup furikake Japanese seaweed seasoning
- 1 sheet nori cut into small squares
- 1 tbsp green onions chopped
- 1 tsp sesame seeds
- ¼ cup tobiko optional, for garnish
Prepare the Rice:
Cook sushi rice according to package instructions.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Pour over cooked rice and mix well. Spread evenly into a greased baking dish.
Make the Topping:
In a bowl, mix shredded crab, cream cheese, Japanese mayo, sriracha, and soy sauce until well combined.
Serve:
Garnish with green onions, sesame seeds, and tobiko.
Serve warm with small nori sheets for scooping.
