For the Salad
- 1 1/2 cups dried green or brown lentils
- 1 cup crumbled feta cheese
- 1/2 cup Kalamata olives pitted and halved
- 1 cucumber diced
- 1 red bell pepper diced
- 1/4 red onion finely chopped
- 1/4 cup fresh parsley chopped
- 2 tablespoons fresh mint chopped (optional)
For the Lemon-Herb Vinaigrette
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Cook the Lentils
Rinse lentils thoroughly
In a medium saucepan, combine lentils with 3 cups of water
Bring to a boil, then reduce heat and simmer for 20-25 minutes
Lentils should be tender but not mushy
Drain and let cool to room temperature
Prepare the Vinaigrette
In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, Dijon mustard
Season with salt and pepper
Taste and adjust seasoning as needed
Assemble the Salad
In a large bowl, combine cooled lentils
Add diced cucumber, red bell pepper, and red onion
Gently fold in crumbled feta and olives
Pour vinaigrette over the salad and toss gently
Sprinkle with chopped parsley and mint
Serve
Can be served immediately at room temperature
Alternatively, refrigerate for 30 minutes to let flavors meld
Best consumed within 2 days
