Ingredients
  

For the Salad

  • 1 1/2 cups dried green or brown lentils
  • 1 cup crumbled feta cheese
  • 1/2 cup Kalamata olives pitted and halved
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh mint chopped (optional)

For the Lemon-Herb Vinaigrette

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions
 

Cook the Lentils

  • Rinse lentils thoroughly
  • In a medium saucepan, combine lentils with 3 cups of water
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes
  • Lentils should be tender but not mushy
  • Drain and let cool to room temperature

Prepare the Vinaigrette

  • In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, Dijon mustard
  • Season with salt and pepper
  • Taste and adjust seasoning as needed

Assemble the Salad

  • In a large bowl, combine cooled lentils
  • Add diced cucumber, red bell pepper, and red onion
  • Gently fold in crumbled feta and olives
  • Pour vinaigrette over the salad and toss gently
  • Sprinkle with chopped parsley and mint

Serve

  • Can be served immediately at room temperature
  • Alternatively, refrigerate for 30 minutes to let flavors meld
  • Best consumed within 2 days
