- 1 lb breakfast sausage
- 2 cups frozen hash browns or diced potatoes
- 1 red bell pepper diced
- 1 onion diced
- 2 cups shredded cheddar cheese
- 8 large 10-inch flour tortillas
- Salt and pepper to taste
- Optional: salsa hot sauce, diced green chiles
Prep Components
Brown sausage in a large skillet over medium heat, breaking into small pieces. Remove and set aside.
In the same pan, cook hash browns until crispy. Season with salt and pepper. Remove and set aside.
Sauté diced onion and bell pepper until softened, about 5 minutes.
Whisk eggs with salt and pepper. Scramble in a large pan until just set (slightly underdone).
Assembly
Warm tortillas slightly to make them more pliable.
Layer ingredients in center of each tortilla:

Wrapping
- Fold sides of tortilla over filling
- Fold bottom up and over filling
- Roll tightly away from you to form burrito
- Wrap individually in foil
Freezing & Storage
- Place wrapped burritos in freezer bag
- Label with date
- Freeze for up to 3 months
Reheating Instructions
From Frozen:
- Microwave: Remove foil, wrap in damp paper towel. Microwave 2-3 minutes, flipping halfway.
- Oven: Keep in foil, bake at 350°F for 45-50 minutes.
From Thawed (Overnight in fridge):
- Microwave: 1-2 minutes
- Oven: 15-20 minutes at 350°F
