Make-ahead breakfast burritos are a convenient, customizable, and freezer-friendly meal prep option. They typically feature scrambled eggs, protein (like sausage, beans), cheese, and veggies wrapped in a tortilla. After assembly, the burritos are individually wrapped and stored in the freezer for an easy grab-and-go breakfast. To reheat, simply microwave or bake until heated through. Perfect for busy mornings!

Ingredients
  

  • 12 large eggs
  • 1 lb breakfast sausage
  • 2 cups frozen hash browns or diced potatoes
  • 1 red bell pepper diced
  • 1 onion diced
  • 2 cups shredded cheddar cheese
  • 8 large 10-inch flour tortillas
  • Salt and pepper to taste
  • Optional: salsa hot sauce, diced green chiles

Instructions
 

Prep Components

  • Brown sausage in a large skillet over medium heat, breaking into small pieces. Remove and set aside.
  • In the same pan, cook hash browns until crispy. Season with salt and pepper. Remove and set aside.
  • Sauté diced onion and bell pepper until softened, about 5 minutes.
  • Whisk eggs with salt and pepper. Scramble in a large pan until just set (slightly underdone).

Assembly

  • Warm tortillas slightly to make them more pliable.
  • Layer ingredients in center of each tortilla:
  • ¼ cup hash browns
  • ⅓ cup scrambled eggs
  • 2 tablespoons sausage
  • 2 tablespoons pepper and onion mixture
  • ¼ cup cheese
  • Optional: salsa or hot sauce

Notes

Wrapping

  1. Fold sides of tortilla over filling
  2. Fold bottom up and over filling
  3. Roll tightly away from you to form burrito
  4. Wrap individually in foil

Freezing & Storage

  • Place wrapped burritos in freezer bag
  • Label with date
  • Freeze for up to 3 months

Reheating Instructions

From Frozen:
  • Microwave: Remove foil, wrap in damp paper towel. Microwave 2-3 minutes, flipping halfway.
  • Oven: Keep in foil, bake at 350°F for 45-50 minutes.
From Thawed (Overnight in fridge):
  • Microwave: 1-2 minutes
  • Oven: 15-20 minutes at 350°F

  • Slightly undercook eggs as they'll cook more when reheating
  • Let ingredients cool before assembly to prevent soggy tortillas
  • Squeeze out excess moisture from vegetables
  • For crispy exterior, unwrap and pan-fry after thawing
