- 2 3/4 cups gluten-free 1-to-1 flour blend with binder like xanthan gum.
- 3/4 cup unsalted butter or dairy-free alternative, softened.
- 1 1/2 cups granulated sugar.
- 1 large egg + 1 egg yolk room temperature.
- 1 tsp vanilla extract.
- 1/2 tsp almond extract optional.
- 1/2 tsp baking powder.
- 1/4 tsp salt.
Preheat the oven to 350°F (180°C) for drop cookies or 375°F (190°C) for cut-out cookies. Line baking sheets with parchment paper.
