Ingredients
  

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 cups whole wheat flour
  • 2 large eggs
  • honey or maple syrup
  • ¼ cup Greek yogurt
  • ¼ cup olive oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon hopped walnuts (optional)

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C)
  • Grease a 9-inch cake pan and line with parchment paper
  • Process 1 cup of oats into flour using a food processor

Mix Wet Ingredients

  • In a large bowl, mash bananas
  • Add eggs, honey, yogurt, oil, and vanilla
  • Mix well until combined

Combine Dry Ingredients

  • In another bowl, mix oat flour, whole oats, whole wheat flour
  • Add baking soda, baking powder, cinnamon, and salt
  • Stir in chopped walnuts if using

Make the Batter

  • Gradually fold dry ingredients into wet mixture
  • Mix until just combined (don't overmix)

Bake

  • Pour batter into prepared pan
  • Add toppings if desired
  • Bake for 35-40 minutes or until a toothpick comes out clean

Notes

For the Topping (Optional):

  • Sliced banana
  • Extra oats for sprinkling
  • Chopped nuts
  • Honey for drizzling

Storage

  • Room temperature: 2-3 days
  • Refrigerated: Up to 1 week
