Instructions
Preparation
Preheat oven to 350°F (175°C)
Grease a 9-inch cake pan and line with parchment paper
Process 1 cup of oats into flour using a food processor
Mix Wet Ingredients
In a large bowl, mash bananas
Add eggs, honey, yogurt, oil, and vanilla
Mix well until combined
Combine Dry Ingredients
In another bowl, mix oat flour, whole oats, whole wheat flour
Add baking soda, baking powder, cinnamon, and salt
Stir in chopped walnuts if using
Make the Batter
Gradually fold dry ingredients into wet mixture
Mix until just combined (don't overmix)
Bake
Pour batter into prepared pan
Add toppings if desired
Bake for 35-40 minutes or until a toothpick comes out clean
Notes

Sliced banana
